Gastronomy summit

The World Gastronomy Summit, organised annually by the International Institute of Gastronomy, Culture, Arts and Tourism (IGCAT), provides a global platform to foster dialogue and collaboration across sectors.

The Summit champions food sovereignty by empowering communities to regain control over their food systems, while celebrating the cultural and social value of food as a driver of sustainable regional development and community well-being.

Each edition of the Summit is hosted by a different World Region of Gastronomy and places a special focus on a theme of international importance.

  • In 2025, in Catalonia (Europe), the Summit highlighted the urgent need to recognise food as a cultural asset, coinciding with its role as an official side event of MONDIACULT. Know more

  • In 2026, in Ecuador (Latin America), the Summit will centre on empowering young people through gastronomy, giving voice to new generations as key actors in shaping the future of food. Know more

  • In 2027, in Vanuatu (Pacific), the Summit will focus on regenerative agricultural and tourism practices, exploring pathways for resilient food systems and sustainable livelihoods.

 

Through its annual Declarations, endorsed by IGCAT’s members, the World Gastronomy Summit sends out a unifying call to action: to recognise food not only as a vital expression of cultural identity, but also as a bridge between regions, sectors, and communities worldwide.
